Zini offers its Customers the highest guarantees as for quality policy and food safety according to the most important European standards of HACCP managing:
- IFS (International Food Standard), lo standard di gestione dell’HACCP, grado HIGHER LEVEL con un punteggio di 97,5/100.
- BRC (British Retailers Consortium), grado “Foundation”.
Since its origins, Zini devoted a great part of its efforts to the research and the development of innovative solutions in accordance with the most important market trends: 10% of its human resources work for the Quality Control Department and they have a new internal Lab and a fully equipped R&D test room at their disposal. Pasta
The use of durum semolina only and the kneading in continuous technology by VOMM® grant:
- an intense and natural yellow colour, just like homemade pasta
- an always “al dente” consistency
- better balanced nutritional values
Cooking and freezing
All of Zini’s products are cooked in boiling water before deep freezing. If compared with dry, chilled or uncooked frozen pasta, the main advantages of fully cooked and frozen pasta can be summed up as follow:
- consistency: freezing after cooking doesn’t modify the characteristics of Zini pasta; on the contrary, it keeps the excellent consistency of freshly made pasta
- time saving:it can be re-heated in only 30’’ to 2’ (depending on the size) directly with sauces in the steam oven or in the pan, without compromising the quality of the final dish
- genuiness: freezing enables to avoid preservatives and additives
- pureness: the bacterial charges are minimized and they remain greatly under the law standards; for this reason also, Zini pasta is ideal for children.
Moreover, Zini pasta is individually frozen (I.Q.F.) in order to optimise portioning and avoid waste.
The advantages of freezing
Cold is the more natural way of conservation because it doesn’t alter the taste and, above all, it preserves the nutritional properties of food.
Zini’s freezing technology is based on a rapid drop of temperature which entails an immediate crystallization of the water in the food. The cellular structure remains intact, thus maintaining not only the consistence, the aspect and the taste of fresh food, but also its content in terms of vitamins and other nutrients.
In continuous production
Zini’s main distinctive feature in frozen pasta industry is the strict connection between its products and its exclusive technologies; this means high quality standard, not only for taste but also for the complete service offered to customers:
- every production process is made in continuous, from kneading to packaging
- process control in every stage is guaranteed: characteristics like cooking level or temperatures are defined in advance by machine setting and are constantly screened by production files
- working in continuous means absolute homogeneity in any production batch, so that products’ performances are always the same.
VOMM® technology
The kneading of egg pasta is made through the exclusive VOMM® technology which grants:
- an excellent absorption of sauces thanks to the high porosity of pasta
- as for Zini Gnocchi, a great control of characteristics such as consistency, dimensions, weight and lining; moreover, durum semolina is put in the kneading before cooking thus granting a high digestibility.
Raw materials
All of Zini’s products are made of strictly selected Italian raw materials. Zini pasta is made of fresh eggs while the fillings do not contain any additives and they are often made of regional ingredients whose quality is certified by the D.O.P. brand (Denomination of Protected Origin).
Filled pasta only contains natural ingredients and it is glutamate free. Fillings are enriched with yeast, a natural hepatoprotective element rich in vitamin B.
Gnocchi do not contain any flavour nor potato flakes: the only ingredients are potatoes, durum semolina and a pinch of salt. They only have 0,06% of fats, most of which are unsaturated and, consequently, healthy.

Practical, easy to store and transport, Zini bags are ideal for all kitchens: they are extremely handy and allow to eliminate waste since only the necessary quantity of product can be used.
