The love for cooking was passed on by his mother and his homeland, a region so rich in tradition and tastes to be discovered: the Marche. High pastry and chocolate are two of Tomas’ great passions… alongside with his more unusual passion for natural yeast, so familiar for him that he calls it, “Eleonor”, and of such a high quality that it owed him the “Tre Spicchi del Gambero Rosso” reward for his pizza and his bread. But it is neither the awards nor having worked for Michelin’s starred restaurants that have made Tomas and Zini choose to one another: it is his refined simplicity and the shared love for genuine things.
